Fluffy buttercream icing to pair with one batter cupcakes, 3 flavours. The recipe includes directions for marble, lemon, and raspberry mini cupcakes.

Ingredients

Units Scale
  • 3 1/2 cups icing sugar, sifted
  • 1/2 cup unsalted butter
  • 2 Tablespoons whipping cream (or full milk)
  • 3 oz. white chocolate, melted
  • 2 oz. dark chocolate ,melted
  • 3 Tablespoons fresh lemon juice

Instructions

  1. In a large mixing bowl beat butter and icing sugar and whipping cream until light and fluffy.
  2. Divide icing evenly into 3 separate bowls.
  3. In bowl one, add melted white chocolate and beat until fluffy, set aside.
  4. In bowl two, add melted dark chocolate and beat until light and fluffy, set aside.
  5. In bowl three, add lemon juice and beat until light and fluffy, set aside.
  6. Pipe icing onto mini cupcakes: white chocolate with raspberry cupcakes, chocolate with marble cupcakes, and lemon with lemon cupcakes.
