Swirled Strawberry Meringue Baskets for Canada Day

These swirled strawberry meringue baskets are light, fresh and crisp! They are the perfect size for one and are gluten free! Dress your meringues with a variety of fillings, like chocolate, ice cream, nuts, etc.

Ingredients

Meringues

  • 4 egg whites, at room temperature
  • 1 cup instant (extra fine) sugar
  • 1 teaspoon pure vanilla extract

Filling

  • Whipping Cream
  • Strawberry Sauce (see recipe below)
  • Fresh strawberries, optional
  • Fresh mint, for garnish

Instructions

  1. Preheat oven to 230ËšF. Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, beat egg whites on medium speed until foamy.
  3. Slowly and gradually add your superfine sugar, raise the speed to high and beat until stiff peaks form and are glossy (approx. 5 mins.). Add vanilla extract and mix to combine.
  4. Using a spatula, drop approx. 2 spoonfuls of meringue and shape into a basket. Make sure to leave lots of room between each basket for the meringues to spread.
  5. Place your baking sheets in the oven and bake for 1.5 hours (make sure not to open the oven door throughout baking). Turn off the oven and leave the meringues inside to cool and dry out.
  6. When the meringues are cool and you are ready to serve them, whip up whipping cream, add strawberry sauce and swirl together. Top with fresh mint and fresh strawberries.

Notes

Store empty meringue baskets in a dry place, preferably in a tin for up to a month.
This dessert once filled will start to soften and eventually the meringue will fall apart, make sure to eat filled meringues the day of.
