This heat has me dragging my feet and working at a snail’s pace these days. I’ve got a list a mile long of all the things I need to do and I’m lucky if I can cross one or two off in a day. Don’t get me wrong I love the heat, but maybe a mid-day siesta or a daily swim would help to cool me off (now, I just need a pool)!? It got me thinking that it would be a good idea to round up the top 6 simple summer recipes from the blog that will help beat this heat!

These recipes have few ingredients and can be adapted to be even simpler.

It doesn’t get any more classic than an ice cream sandwich to break the heat! What I love about making your own ice cream sandwich is you get to make any combination that you like! For a simpler version use store-bought cookies (although home-baked cookies are 100% better).

I hope you enjoy my top 6 summer recipes to help you cool off this summer. My current favourite is making homemade ice cream sandwiches. I used my toll house cookie recipe and sandwiched the cookies with Kawartha Dairy Strawberry ice cream!
